Start the day with a healthy feast thanks to Maggie Lynch
Serves 2
Ingredients
4 slices of your favourite sourdough, wholemeal or GF bread
250g cottage cheese or fresh ricotta (1 tub)
2 tsp lemon juice
1 tbsp dill, finely chopped
¼ - ½ tsp Mānuka Health Mānuka Honey, plus extra to drizzle
Dukkah (or Chilli Flakes or Sumac)
Seasoning
1 avocado
Method
1. Mix together cottage cheese, lemon juice, dill, Mānuka honey and seasoning. Keep chilled until ready to use.
2. Toast or char-grill bread until golden. Halve the avocado, remove stone and thinly slice.
3. To serve: Spoon cottage cheese mixture equally over each slice of bread. Top with sliced avocado and sprinkle of dukkah. Drizzle with extra Mānuka Health Mānuka Honey, serve straight away.
Maggie’s Tips
• Dukkah is a traditional Egyptian condiment of nuts, herbs, and spices. It is used as a dip with bread and olive oil. I sprinkle it over chicken, tofu, fish, salads and vegetables.
• For a more luxurious version you can add thinly sliced organic smoked salmon.
