Overnight Oats With Mānuka Honey, Creamy Yoghurt & Blackberries

Overnight Oats With Mānuka Honey, Creamy Yoghurt & Blackberries

Start the day with a healthy feast thanks to Maggie Lynch

Serves 2

Ingredients
100g Jumbo oats
½ level tsp cinnamon
Pinch of salt
1 tbsp golden linseed (flaxseed)
300 ml water
80g blackberries (small handful)
1-2 tsp Mānuka Health Manuka Honey
2 tbsp Greek yoghurt (optional)

Method

1. Mix oats, cinnamon, salt, linseed, water and Mānuka Health Mānuka Honey in a bowl. Cover and refrigerate overnight.
2. Next day, bring to room temperature, combine with the Greek yoghurt if using.
Top with blackberries and an extra drizzle of Mānuka Health Mānuka Honey.

Maggie’s Tips

1. I enjoy my oats made with water, but if you want a creamier version use milk, nut milk or coconut milk.
2. Vary flavours: blend in nut butters, or add stewed apple or rhubarb, or prunes.
3. Vary berries; add chopped nuts, dried fruits, vary spices: cardamom, cinnamon, nutmeg, turmeric, etc.
4. Can be prepared 2-3 days in advance.
