Soft, golden and lightly sweet, Maggie Lynch’s truffles are an easy-to-make treat that the whole family can enjoy.

Sesame & Manuka Chocolate Truffles

Makes 8-16 depending on tray size

INGREDIENTS

180g dark chocolate (70% cocoa solids)

2 tbsp toasted sesame seeds

2 tbsp light tahini

2 tsp Manuka Health Manuka Honey

¼ tsp cardamon

¼ tsp Himalayan salt

Zest of 1 orange

2 tsp orange juice

METHOD

1. Break the chocolate into pieces and place in a heatproof bowl set over a pan of gently simmering water (bain-marie), with the base just above the water. Melt slowly, stirring occasionally. Remove from heat and allow to cool slightly.

2. Stir in 1½ tbsp sesame seeds with all the tahini, Manuka Health Manuka honey, cardamom and salt, plus the orange zest and juice. Mix well until fully combined.

3. Spoon the mixture into small bun cases or petit four trays (I used silicone moulds), then sprinkle the remaining sesame seeds over the top.

4. Leave to set, then store in an airtight container in the fridge.

MAGGIE’S TIPS

• Will keep for up to 1 month in the fridge.

• These are even better the next day, once the flavours have had time to settle and mellow.
