INGREDIENTS
200g ground almonds
1 sweet potato
1 tsp cinnamon
1/2 tsp cardamom
1/2 tsp baking powder
1 large banana
1 tbsp Mānuka Honey MGO 100+ from Mānuka Health
4 eggs
PREPARATION
- Peel the sweet potato and grate. Mash the banana with a fork. Place all the ingredients in a food processor and mix to form a smooth dough.
- Grease a muffin tin and divide the dough mixture into 8 using a spoon. Bake in a preheated oven on the middle rail at 175 °C for about 15 to 20 minutes.
